 A New Theory: Theorie Lounge

It's been about a year since Real World Denver wrapped and sent seven tragic train wrecks packing. Since then, the infamous Real World home has changed hands, been gutted and is now all gussied up for its second act in the limelight.

Meet Theorie.

Opening this weekend, Theorie is the latest uber-posh lounge, restaurant and bar to open in Denver . Taking aim at the well-heeled crowd, owners Steve and Shane Alexander have decided on New American cuisine with an Asian and French flair, an expansive bar and a bottle service lounge. 

Design-wise, the roughly 21,000 square feet of space has been outfitted with a sort of bordello nouveau vibe. Outfitted with a mish-mash of both contemporary and romantic elements (think: Panton chairs against bustled curtains and zebra prints), it's pretty clear that Theorie is trying its hardest to be considered one of the cool kids on the block.

For the menu, Shane and Steve have brought in executive chef Deryk Schnepf (formerly of Bravo at the Adams Mark Hotel ). And while the notion of yet another fusion restaurant makes me cringe, many of the dishes are truly unique and altogether, pretty interesting. A few standouts worth mentioning are the Diver Scallop Brule appetizer served with a yuzo and olive oil mache, the  Espresso Crusted Prime Rib Filet served with white truffle creamed spinach and the dessert Smores created using flourless chocolate cake, gelato and marshmallow foam. 

Best of all, Theorie has its own late night menu, serving such snacks as white truffle and cheddar popcorn, Kobe burgers and even a high-class take on wings, all served until 1am. I don't know about you but, if nothing else, their late night menu will serve as a great alternative to those post-club cooler-wielding burrito boys.

All in all, I think it's safe to say that this Theorie will no doubt stand the test of time.
