A good meal out isn't just about the final destination (or the resulting food coma); it's about the journey. And, if you're like us, hitting the same old haunts every weekend, you could use a little change of scenery.

Take a detour from the familiar dining landscape at Encore. From the team that brought us Black Pearl comes a new, posh eatery located in the "Lowenstein Culture-Plex. " (a.k.a The Tattered Cover on Colfax). Situated in the box office area of the former theater, the vibe is contemporary yet casual with a long, sleek bar and a back kitchen that's in full view of the dining room. The real story though is that the entire space is almost completely eco-friendly. 

The group is passionate about conservation and employ all things Green in both the front and back of the house. For instance, the chairs were once used by the Aspen Ski Corporation and the tabletops have been reincarnated from the bleachers at University of Northern Colorado. Even the kitchen is onboard with sustainability, offering up their used cooking oil to a local grease-to-gas producer. 

As for the food, Encore's menu is as eclectic as the neighborhood it's in, with everything from $8 burgers to $29 filets. They also have a nice list of $4 sides including wood-fired vegetables, mashed potatoes and a delicous couscous concotion. And true to form, expect Executive Chef Sean Huggard to treat his diners to a host of creative dishes including, a flat bread pizza with prosciutto, fig jam and arugula, roasted artichoke with truffle butter, and a signature main course that's not to be missed: the Moroccan-style beef short ribs. 

And, what would a former theater-turned-restaurant be without a little show? Count on live music nearly every night of the week and on Friday and Saturday nights you can kick-back and listen to show tunes and standards from a variety of local vocalists.
